Palomino is the primary grape for Sherry wine from Spain! About 95% of all Sherry is made from Palomino due to its low acidity, mild aromas, and ability to develop unique oxidative flavors.

Palomino is naturally neutral, but its aging process and oxidation create complex flavors!
