Assyrtiko is one of Greece’s most iconic white grape varieties, originally from the volcanic island of Santorini. 

It thrives in harsh, dry, and windy conditions and is one of the rare grapes that retains high acidity even when fully ripe.

 

Flavor:

Assyrtiko wines are known for their minerality, refreshing acidity, and crisp profile.

You may detect notes of lemon zest, green apple, white peach, sea salt, and flint. Some expressions even show a smoky, volcanic rock character.
