Is Making Cake Without Alcohol Illegal in Germany?
Black Forest should be known to everyone. It turns out that the German government has set up a legal regulation for Black Forest cake in the ‘National Cake Regulation’ in 2003. Article 20 of the ‘Cake Law’ stipulates that a Black Forest cake (Schwarzwälder Kirschtorte) must fulfil five conditions before it can be labelled as a ‘Black Forest cake’, or else it may be in violation of the law.
Rules:
1. The cake must be filled with fresh cream and cherry, with at least 50ml of cherry liqueur (40-50% alcohol) per kilogram of cream.
2. The cherry liqueur flavor must be distinctly noticeable.
3. The base must be a crispy thin pastry crust.
4. The body must be a chocolate chiffon cake with at least 3% cocoa.
5. The outer layer must be wrapped in fresh cream and topped with chocolate shavings.
